I’m really getting back into cooking. Monday I made a black bean chimichanga. Yesterday I went bonkers and did two small portions of air-fried chicken katsu and grilled two other small portions on the grill with different seasonings on each. One katsu piece I made into a sandwich.

Chicken caprese on a ciabatta with tomato pesto, fresh mozzarella, basil, tomatoes and Moderna balsamic vinegar; I added lettuce on this one to change it up.

Tonight I used a recipe for baked feta pasta, but I didn’t follow it verbatim. I didn’t have a block of feta cheese (just some crumbled) so I added a few extras and made it my own. It turned out delicious and is pretty good as far as being healthy. There’s not much cheese in it at all.

I have some ingredients for veggie lasagna so I may make up a few small pans with 1-2 servings for the freezer. I want to make sure I don’t waste food and this is a good way to do that.

I ordered some 1 ounce spice jars to fit in my spice rack in the trailer. I got them a few days ago and washed them up. I left them on a drying mat a few days to dry out so I can start filling them up. They are like the spice bottles with the red lids you see in the store. My spice rack looks like it is made to fit those 2-3 ounce bottles but I could not bring all the spices I wanted to use.

With these small jars I can mix & match sizes so spices I use more often can be in bigger bottles. I can fit two small ones in the place of one larger one.

Along with that order I got a weather radio. It’s a must living in tornado alley. When severe weather notifications happen NWS will trigger the alarm and I can make sure the dogs and I are safe. It’s portable and runs on battery and solar so I can take it traveling (Ironically, as I typed this last sentence the alert went off for west of here!).

Looking like it might be a stormy night tonight so I won’t get much rest. The forecast is for some thunderstorms and the winds are picking up. The alarm will scare the bejeezus out of you when it kicks on but it’s good peace of mind.
