A Little Clarification, Baaaa Humbug & More Food

With regards to my “splurge days”, it’s not like I’m on a cholesterol crawl all day. I may have a single donut or, like yesterday, one meal. I usually don’t eat a third meal on a splurge day to try and help cut down on sodium, fats & guilt. On these days it’s a special treat for me but I still feel really guilty anyway.

I try to not feel that way because you have to give yourself a special treat sometimes or you can easily fail at a diet. Still, it’s hard to not feel remorse after a good meal at a good restaurant.

I’ve worked hard to take care of myself better after my triple bypass (coming up on two years!). I have pretty much eliminated fast food from my diet so if I do splurge at least it’s eating real food.

I decided to make my lamb kofta kabobs today. I got the lamb in my mixing bowl and got about halfway through the ingredients list…then tragedy struck. I had used the last of my coriander in something else. I had to stop, put the mixture in the fridge, and head to town for more.

I grabbed what I needed at the store and came back to finish up the lamb mix. It smells pretty good in the bowl! It will rest overnight in the fridge and land on a pita with tzatziki, feta & tomato after a stop on the hibachi tomorrow.

I got some pizza dough out of the freezer and will be firing up the Ooni pizza oven this weekend. I have some chicken to grill up so I may just go absolutely crazy! Just imagine…olive oil on the crust, grilled chicken, sun-dried tomatoes, feta cheese, artichokes, basil and a glass of red wine. Or, maybe tomatoes, fresh mozzarella & basil and a glass of red wine. Maybe, just maybe…sliced vegan meatballs, sauce, mozzarella, basil mushrooms…and a glass of red wine.

That just goes to show you the possibilities with a glass of red wine.

It’s looking like a weekend of cooking outside – my favorite! It’s really going to be nice to get back to cooking more. I’m looking forward to it and the satisfaction it will bring.
