Made up some omelette breakfast burritos this morning with fried mushrooms, onions & peppers, Gouda, and bacon. Before you hammer on me about my diet, I cooked up six eggs, split three slices of cheese, and chopped two small strips of bacon. I divided all that up between six burritos and topped each with peri-peri sauce. Delicious and not too big of a splurge.
I can only eat one breakfast burrito or sandwich a week or so because of the whole egg and the little bit of bacon, but I probably go two weeks (sometimes months) between them to keep things under control and mainly have oats & berries for breakfast. I usually use egg substitute but I had to buy eggs for a recipe and wanted to use them up.
Got some organizing done after that but had to stop to go to town & get the propane bottle. It’s a small step but something else got done today. Plus I’m having problems with my cell carrier AGAIN so I spent too much time getting that taken care of. I ended up going to a different carrier. Tired of the customer service problems.
So, I get the bottle back home to hook it up to the grill…and it’s the old-style hose connector that they don’t put on bottles anymore. 🤦🏼♂️ Luckily I had the Y-connection for the new bottle valve in my spare trailer parts bin. Then, as I tried to take the old connections off I broke the whole valve. 💩Grill be ruined.
I improvised. I took the lid off the grill and set my portable grill up on top of where the grate goes, put the bottle into the bottom of the grill and hooked it up. It actually makes a great stand for my portable grill so all is not lost. And, it didn’t cost me a penny. I will be doing something a bit more sturdy to fix it right. For now, however, it’s time for cooking up dinner.
I picked up some Impossible Burger yesterday and grilled up four sliders to eat and four for the freezer. I roasted an ear of corn to go with that and my dinner is completed with a glass of the grape; tonight’s wine selection is Ozark Hellbender from Stone Hill Winery. A delicious and decent bottle of red for the money.
People may bag on that fake meat but it is actually pretty good. Go to BK and get an Impossible Whopper and see for yourself. It’s not ground beef so don’t act like it is, but it’s a damn good burger in its own right.
They are a bit healthier than a real burger, but I’m sure it’s still not better than a salad. I like them as it helps the planet by not eating cows, plus, well…I’m not eating cows. No, I’m not vegetarian but I haven’t eat much red meat in several years. I had no lunch today, like many days I have a splurge meal.
I have tomatoes coming on the vine and many blooms. I have some bell peppers on the vine as well as blooms, and my habanero and ghost pepper plants are blooming too. Looking like some salsa coming up!
I really need to learn to can some things. I can do it in my Instant Pot so I may be trying that soon. Salsa is easy to make and I’m gonna start making my own more often.
Weather has been nicer and it’s a welcome change. I’ve had enough of the hot weather.
I haven’t talked too much about travel lately. It’s because I am frustrated trying to think about it. I don’t want to make plans in cooler weather due to the potential heating issues in Europe. I still want to go but I have just kind of put most travel things on the back burner for now and try to figure something out when I see how things go the next few months. I do still have some other ideas…
I have been lightening up the stuff in the trailer in hopes it will not only be less stuff but also help with the gas mileage. Like getting some of the cooking stuff out – some was cast iron. That should help some. Plus it can have a place to keep a few more groceries. I cannot prep many meals for the trailer since the freezer is about the size of a shoebox. It’s nice to have the extra room when you’re going to boondock several days.
So I am still thinking of travel, but for now it’s going to be a bit closer to home. At least I have some certainty.
And I have plenty of other stuff to do. It’s really nice to cook again!
