I came back from the store with an ear of sweet corn and a package of some Impossible burgers for a cookout. I put the corn in a pitcher to let the husk soak…I was so ready. Then, reality set in.

The propane bottles were empty. Wah wah wah wahhhhh.

Now just how unfortunate was that. So unnecessary to have that happen. Oh well, I stocked up on groceries today while I was out and I have other stuff to eat. I plan on a meal prep day to restock the freezer so it was a big grocery day.

I have really considered doing a meal delivery service again. I got a great offer from T-mobile for Blue Apron so I might give that a shot. It’s so convenient to get those boxes but my diet is different now and I gotta watch things I eat. It’s convenient, yes, but it is almost as easy to just look up recipes you like and cook them.

A few days Loran made this interesting chicken dish he found online. You split a chicken breast open and cut back into the sides of it from the inside. Then put a wad of foil in that to open it up like a bowl made of chicken. We did a different recipe than the one he found.

We sprinkled fajita seasoning all over it, then he put them in a skillet and fried both sides until almost cooked-through. He spooned in cilantro rice, black beans, corn and cheese and baked it in the oven and topped with salsa before plating. It was very delicious.

The chicken breast he got were a pound each. They were so big they should have tested for steroids. They weren’t sold by weight; it was by size and these were DD! 🤣🤣🤣

I went to a few thrift stores the last few days and got a couple of non-stick ceramic pans for the trailer. I’m trying to cut back on some things in the trailer for room and weight plus these pans clean easily. I have a wok in there, a Dutch oven, cast iron skillets, and a mini wok/saucepan thing I found that will be useful.

Recently a friend called and he told me they got a tortilla press and they love it and use it all the time. Well, I found an electric one today so I snagged it for $5. I have been wanting to try to make them at home so I guess I will be doing that!
