Yeah, it pretty much sucked after February

It’s starting. The rains are beginning to fall. The weather is calling for rain the next several days but we will see how long it lasts. At least it will be slow and not too much at a time so hopefully it will soak in.

They abused me in cardiac rehab today and my thighs are really feeling it. They cranked up the stationary bike and I felt the burn immediately after doing the new steeper treadmill incline. I only have one more visit next week so I imagine they will let me have it then, too. That’s fine – it’s what needs to be done and I have to be diligent in keeping on this stuff going forward, which I don’t see as much of an issue.

I finally got the rear window lower half re-caulked after today’s cardiac rehab. I figured with the rain coming I should get it sealed up since I had already pulled the caulking out of the lower half of the window (I forgot I had done that hahaha). It really had to be sealed up even though it was on the bottom – not taking any chances on leaks. It looks crappy but it shouldn’t leak. At some point I am going to need to just pull the window out and maybe even replace it so I can get it sealed good once and for all plus it won’t look like 💩.

Going to be doing another round of disc golf this weekend (provided the weather holds out) then it’s another wood-fired pizza afterwards. Can’t wait for that! I’m taking a few of my own ingredients to share this time, like some capicola ham, prosciutto, salami, roasted red peppers, minced garlic, and pesto. I might even take some Gouda to go with that prosciutto as my guess is that would be mighty tasty. I have never had capicola so I am curious to try that.

I am going to bake up some more fruit oat bars the next few days. The last batch turned out really good and I have lots of ingredients – enough to make several batches. I think I will make a couple different flavors this time. One will be strawberry for certain, and the other I am not sure yet. The last one was blackberry chia and they were really good so if I can find the fruit spread to do that I will. They are made from natural ingredients, but part of the natural stuff is butter so I cut them fairly small to keep my fats lower.

Lately I have been making my own sauce for pasta but it is an olive oil base and not tomato sauce. I wanted something different. I want to get the benefits of olive oil and a lot of flavor without the tomato sauce so I make a veggie sauce out of a couple of tablespoons of olive oil and whatever I feel like putting in it — garlic, olives, roasted peppers & onions, garlic, sun-dried and fresh tomatoes, a small pat of butter to make it a little silky, crushed red pepper, carrots and some seasonings. I basically stir-fry it in a pan, putting in the ones in first that needed to cook (like carrots) and work your way down through adding your ingredients. It is really delicious & flavorful and a little goes a long way, especially if you use rotini or penne pasta – any pasta with ridges to grab the sauce. It doesn’t need to swim in sauce.

I have had this new M1 iPad Pro a little while now and I really like this thing. I mean I really like it a lot – even better than my MacBook Pro that I got rid of to get this iPad. I find that it does most everything I want to do, but the one thing I miss is having a desktop machine for managing my library of music and movies. I find it is much easier to do those things on a computer. I am finding many duplicates on my iPhone library and I think it is advantageous to have a central library to sync with so I may need to get a desktop machine.

That’s it for now.
